someone went and made the open source camera
OMG LOOK AT THESE GUYS! LAZYWEB WINS! http://www3.elphel.com/
They have oem components that just plug into each other and are exactly what I wanted to make! I wonder if they'll sell me parts. look at the 10353+10342+10347+10369. add a kodak sensor and power and you're in business! They have a wiki! I'm stoked. Glad someone finally did this.

hey I just stumbled upon your blog whilst looking for the elphel proj to see their updates. I think what you're doing is great. I like how you mentioned separating a lot of the controls from the camera. Like from a remote device. I think that would be great and ideal. It would allow a for more choice in how media is stored and what not. ANyways good luck and I look foward to checkin in again on your progress.
Another nice project is the leanxcam: http://www.scs-vision.ch/en/leanxcam/
The camera is entirely open source, software as well as hardware. It comes with a uCLinux and an image processing framework.
The camera won the Vision 2008 Award.
